Today I propose a pie crust out of the ordinary and inseparable duo pastry, butter-flour! Puffed quinoa lends itself very well to exercise. It is not always easy to find in a regular supermarket. It will go for a stroll in the health food store.
For the pastry 2 tbsp. tablespoons butter 2 tsp. tablespoons pit green cane sugar 1/4 teaspoon cinnamon 60ml corn syrup or liquid honey 50g puffed quinoa 3 tbsp. tablespoons chopped pistachios
For the filling 150g dark chocolate 70%, chopped 2 tbsp. tablespoons cane sugar 250ml cream 75g soy fresh raspberries, mashed 1 tsp. coffee balsamic pit green vinegar chopped pistachios
Pastry Lightly oil a pie dish with a diameter of about 23cm. in a medium saucepan, melt the butter with the sugar, cinnamon and corn syrup (or honey). Bring to a boil, then remove from heat. Add puffed quinoa and pistachios, finely chopped. Mix well. Lower the prepared pan, smoothing out the edges, and then refrigerate.
Filling: In a saucepan over low heat, melt chocolate pieces and cane sugar in the soy cream. Remove from heat. Stir raspberry puree and balsamic vinegar. Stir to blend.
Pour into the mold assembly on the bottom blown quinoa. Gently shake the pan to evenly distribute the filling. Sprinkle some chopped pistachios and refrigerate about 2 hours or until the ganache is firm.
This is a rather light and balanced recipe: quinoa is a seed rich in protein that contains all the amino acids the body needs. Moreover, it is rich in iron and it does not contain gluten. For a chocolate cake, it decreases pit green sharply from fats since ganache is soya, much less that the fatty cream from cow's milk.

Thank you for having found this recipe, very good. I've done it twice in a week. I put instead of butter mashed almond and full instead pit green of soy almond cream ... uhmmm! The next Carmen
