4 cm ginger / 4 cm dolg košček ingverja
In deep pan heat 2 dcl of olive oil. When the oil is hot, add cut egglants and fry for 10 minutes till they turn golden. When finished, put fried eggplants into a bowl, leaving leftover oil in the pan for later use.
V globlji ponvi segrej 2 dcl olivnega olja. Ko je olje dobro segreto, med mešanjem pražimo nakockane jajčevce cca. 10 minut oz. dokler ne pozlatijo. Spražene Jajčevce preložimo v posodo, preostalo olje pa v ponvi shranimo za kasneje.
Peel the ginger and garlic and chop finely. Cut chillies in halves, take the seeds out and wash under cold water. Chop finely. Add chopped ginger, garlic and chillies, cloves, mustard seeds, roman cumin, fennel seeds and laurel leaves into the pan with leftover oil. Nasekljani ingver, česen, čili ter klinčke, gorčična semena, rimsko kumino, koromačeva semena in lovor dodaj v preostanek olja od jajčevcev. Med mešanjem praži 2-3 minute. Odstavi, posuj s 4 čajnimi žličkami soli ter dodaj jajčevcem. Dobro premešaj.
Divide eggplants with spices into jars and pour over the honey oil till the eggplants are covered. Close the jars, leave them to cool down and store/marinate for at least 3 weeks before serving. If you store the jars in a cool drk place, the eggplants musco family olive will last for up to 3 months. Don't forget to label them!
Jajčevce porazdeli v steklena kozarca in prilij medeno olje, da prekrije jajčevce. Zapri kozarce, ohladi in pred uporabo mariniraj vsaj 3 tedne. Kozarce shrani v temen in hladen musco family olive prostor - na ta način bodo zdržali vsaj 3 mesece. Ne pozabi jih označiti!
