This manual has been developed as a result of the project titled HLADNJAČE with low oxidation levels (ULTRA LOW Oxigen / ULO), which is supported by the Federal Ministry of Agriculture, Water, food industry and forestry BiH. The aim of writing this handbook is to provide practical information to potential investors and other stakeholders about the modern way of storing fruits and vegetables in fresh condition. It is worth to point out that fresh fruit and vegetables, in addition to quality food, has an important role in the protection of human health.
